One-Pot Tomato Basil Thighs

One-pot thighs simmered in a garlicky tomato-basil sauce—easy comfort with minimal cleanup.

Ingredients:

  • 1½ lbs One Fine Chicken thighs
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes, optional
  • ½ cup fresh basil, chopped (or 2 tsp dried basil)
  • Optional: cooked pasta, rice, or crusty bread for serving

Instructions:

1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
2. Season thighs with salt and pepper. Sear 3–4 minutes per side until browned.
3. Add onion and cook 3 minutes. Add garlic and cook 30 seconds.
4. Stir in crushed tomatoes (and red pepper flakes if using). Reduce heat to medium-low.
5. Simmer 18–22 minutes, until chicken is fully cooked and sauce thickens slightly.
6. Stir in basil. Serve with pasta, rice, or bread.

Food Safety Reminder: Chicken is fully cooked when the thickest part reaches an internal temperature of 165°F. Always use a meat thermometer to confirm doneness before serving.
