Sheet-Pan Fajita Drumsticks

Fajita-style drumsticks roasted with peppers and onions—one pan, big payoff.

Ingredients:

  • 2 lbs One Fine Chicken drumsticks
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 lime, cut into wedges
  • Optional: warm tortillas for serving

Instructions:

1. Preheat oven to 425°F. Line a sheet pan with parchment or foil.
2. Toss peppers and onion with 1 tablespoon olive oil and a pinch of salt.
3. Toss drumsticks with remaining olive oil, chili powder, cumin, garlic powder, salt, and pepper.
4. Arrange vegetables and drumsticks on the pan in a single layer.
5. Bake 35–40 minutes, flipping drumsticks halfway, until fully cooked.
6. Serve with lime wedges (and tortillas if using).

Food Safety Reminder: Chicken is fully cooked when the thickest part reaches an internal temperature of 165°F. Always use a meat thermometer to confirm doneness before serving.
